Our countryside speaks for itself. The fruits that grow in it. The animals we raise there. And the marine catches that are hauled in to our fish markets. Ibiza’s flavourful gastronomy is comprised by the products given to us by our fertile lands: local ingredients bursting flavour that add zest to our dishes, and keep our fields alive as well as the crafts of the sea. Take a seat at our table. You’ll come away with an amazing taste in your mouth 365 days a year.

Products of the land

Fertile, generous, and increasingly focused on maintaining environmental health. The land of Santa Eulària des Riu has kept its farming heart, both in the fields and on the table. You can see this for yourself in the terraced landscapes that meet your eye as you go towards the tranquil cove of Cala Mastella; or in the red soil where almond trees, fig trees and carob trees dot the land, as they do in Es Figueral pla (plain) in the north of the municipality; or in the historic milling tradition of Santa Eulària des Riu, evoked at the River Interpretation Centre of Can Planetes. Our fertile soil, rich in iron, is where an incredible 80% of Ibiza’s agricultural produce is grown. The surface area devoted to organic farming grows every years, a clear indication that the island increasingly supports agricultural practices that are both sustainable and respectful of the environment.

Our countryside produces a wide variety of fruits and vegetables, noteworthy among them being a range of crops distinguished by their Territorial Quality Mark, a designation which differentiates them from non-local varieties: Garrova d’Eivissa (carob from Ibiza), Sindría d’Eivissa (watermelon from Ibiza), Ametlla d’Eivissa (almonds from Ibiza), Oli d’Eivissa (olive oil from Ibiza), Certified honey from Ibiza, and Patata Vermella d’Eivissa (red potato from Ibiza), whose delicate texture and high capacity to absorb and transmit flavours makes it a staple in Ibicenco recipes. In our markets, you will also find tomatoes, broad beans, cabbage, aubergines, melons, peppers, onions, chard, strawberries, pomegranates, medlars, tangerines, oranges, lemons, avocadoes, figs, apricots, persimmons, fennel, asparagus, carrots, pumpkin, leeks… Our fields provide a varied and generous yield!

Poultry, lamb and pork

The Territorial Quality Mark Anyell d’Eivissa (lamb from Ibiza) signals lamb that has been born and bred in Ibiza according to traditional practices. In addition to lamb, our countryside also produces farm fowl, goats and pigs, from which we make our traditional sausages, such as sobrassada, which merits the Quality Mark Sobrassada d’Eivissa if it is made in the traditional way with locally raised pork fed chiefly on grain and carob.

Fruits of the sea

Ibiza is a fortunate island graced by a rich variety of fish and seafood all year long. During your holiday, you will, of course, find lobster, but also other species you may not have heard of. Your stay in Santa Eulària is the perfect time to try delicious sea-based dishes, perhaps at a beach shack next to the sea, or at one of the Restaurants with Charm. So, whether you go to a fishmonger’s or have your fish served up directly at the table, you’ll encounter a veritable smorgasbord of marine delicacies: John Dory, red scorpionfish, grouper, monkfish, gerret or picarel, red mullet, raor, sirvia or greater amberjack, dentex, albacore, red tuna, espardenyes or sea cucumbers, octopus, squid and ray fish.  Not to mention two products with their own Territorial Quality Mark: Llagosta d’Eivissa (lobster from Ibiza) and Gamba Vermella d’Eivissa (red prawn from Ibiza).

Given this ample offer, you will not be at a loss for choice during your holiday. All of our sea products come labelled with their own quality seal, Peix Nostrum, an identifying tag carried by all of the seafood caught and marketed by the island’s artisanal fleets and fishermen’s guilds.

In Santa Eulària’s shops and restaurants, you will find craft beers, carob-based products, Ibiza’s fabled sea salt, Hierbas Ibicencas (herbal liqueur), local oils and wines, goat’s and sheep’s cheese, sausages, bread made from a local variety of wheat (xeixa), as well as traditional sweets such as flaó, a type of cheesecake with its own Quality Mark Flaó d’Eivissa.
